Insert the desired die into the locking ring (Fig. 6)
The raised portion of the die must be facing downwards (Fig. 6b).
Fully tighten the locking ring on the cylinder (Fig. 7).

Choose the size of the biscuits by rotating the appropriate

* For delicious chocolate cookies,
add 50 g of cocoa powder and a sachet
of baking powder to the basic recipe.
* For tasty almond or hazelnut
biscuits, add 200 g of finely chopped
almonds, or 150 g of finely chopped
hazelnuts to the basic recipe.
* For crunchy coconut biscuits
add 100 g of coconut flour to the basic
recipe.

Turn the knob so that the racket lever jack meets the teeth of the piston rod.
Lower the lever a few times until the dough comes out evenly from the die holes.
Remove and discard this first batch of dough so that the die remains clean.
Now place the machine on the cold oven tray and push the lever down with the
black extension inserted as shown in Figure 9.

RECIPE FOR RUSTIC BISCUITS
* 250 g plain white flour
* 1 pinch of salt
* 250 g yellow corn/maize flour
* 1 cup of milk
* 80 g sugar
* 4 egg yolks
* 160 g butter
Lift the lever and move the machine, ready for another biscuit (Fig. 10).
Pre-heat the oven to about 180° C (= 350° F).
Put the tray with the biscuits in the oven for about 20 minutes (Fig. 11).
