Making ravioli
• Prepare a pasta dough according to the basic recipe and roll a
sheet until position 3. the sheeted dough must be elastic, in the
same width as the rollers and must not be sticky.
• sprinkle the rolled dough from both sides with a little flour, fold it
once, so that the edges are just above one another and cut a
straight end
.
• fix the ravioli attachment on the pasta machine, remove the funnel
and insert the crank into the opening of the attachment
• Place the closed side of the dough sheet straight on the rollers of
the ravioli attachment. turn the crank a little to fix the dough sheet
between the rollers
• lay the ends of the dough sheet each on one of the lateral rolls
and place the funnel on the dough sheet

• Put some of the filling evenly over the entire width into the funnel
, then slowly turn the crank to prepare ravioli from the dough
sheets
.
• add more filling if necessary.
attention: the funnel has to be empty before the dough sheet has
been completely passed through the ravioli attachment. remove
excess filling gently from the funnel.
• allow the dough filled with pre-cut ravioli to dry a few minutes on

a floured clean dish towel before disconnecting the ravioli.
tips and tricks
• to prevent the dough from drying, store it up wrapped in cling film
until further processing.
• Prepare a new dough sheet only after the previous one has been
completely processed into ravioli.
