9.5 Marinates in containers
• Marinates of meat and fish, in containers without a lid.
Step
Choose a container suitable for vacuum packaging
that fits in the vacuum chamber, which once inserted

remains approximately 1 cm from the closed lid of
the packaging machine.
Pour 20 ml of marinating liquid into the container for each 100 g of product and close the lid of the container.

Insert only sufficiently cooled foods; products cooled to 3°C (refrigerator temperature) provide the best results.

Open the lid of the packaging machine
Insert the container into the vacuum chamber.
Make sure there is a distance between the

container and lid of at least 1 cm, other-
wise do NOT proceed, and change the
container.
