Before each use, carefully clean your machine and the
accessories that come in contact with food (canisters,
lids, jars, etc.) following the instructions provided in
the paragraph "CLEANING INSTRUCTIONS".
1 Positioning the machine
Position the machine in a dry place on a horizontal
surface, being careful to leave the work zone around
the machine itself free of obstacles and wide enough
to allow for placing the bags of food to be packaged.
2 Connecting the machine
Insert the Power Cable Plug (11) in the outlet (see
technical information). LEDs 1.2 and 1.4 for the
Normal and Humid keys will be lit.
3 Adjustments
Adjustments must be made whenever the Power
cable (11) is plugged into the outlet.
To set the desired adjustment, press the correspond-
ing key.
3.1 - Set the Pump suction Speed
MAGIC VAC ® (Mod. P0211ED) is equipped with a
pump suction speed regulator to make the packing
operation easier.
When the machine is activated, the speed is auto-
matically set to Normal, which is the highest that can
be used in normal packing operations. However,
when packing fragile foods in MAGIC VAC ® bags, it is
best to select the Slow function which reduces the
pump speed, thus allowing control over the perfor-
mance of the operation by manually activating the
sealing process with the Manual Seal button at the
proper time.
3.2 - Set type of sealing
MAGIC VAC ® (Mod. P0211ED) is equipped with seal-
ing type adjustment. In fact, the final bag sealing
result can be influenced by the type of food to be
packed or the temperature of the room.
Thus, to optimize the final result you can choose from
2 sealing modes:
Dry for dry foods like cookies, rice and coffee
Humid for red meats and fish that release liquids or
blood.
4 Recommendations for bag use
MAGIC VAC ® bags are available in various sizes. Check
the ideal bag size for the food that you intend to
store. Make sure the length of the bag to be used is at
least 8 cm greater than the food to be stored and add
another 2 cm for each time the bag is to be reused.
Please note: If you are using pre-cut bags, skip to
point 6 of these instructions.
5 Making bags from MAGIC VAC ® rolls
- Lift the Cover (4) and the bar with Bag Cutter (6),
insert the bag roll (fig. A) allowing some length to
protrude so it can be pulled out, then close the bar
with Bag Cutter (6).
ATTENTION: whenever you close the bar with the
Bag Cutter (6), be careful that the bag-cutter Blade is
positioned at one of the two ends of the slot. The
bag-cutter blade MUST NOT BE IN THE CENTER of
the bar with the Bag Cutter (6) (fig. B).
- Unroll the correct length from the roll (fig. B). Press
the Bag Cutter blade (6) beginning from either one
of the two sides of the bag and run it along the

tract according to its width. This will cut the piece
neatly and precisely (fig. C). Now you can seal one
open side of the piece by following these steps.
- Lift the Cover of the machine (4) and rotate it to the
open position.
- Set one of the two open ends of the bag near the
Sealing Gasket (9) (fig. D).
- Close the Cover (4) and press the two opposite
ends (fig. E), you will hear a click, which means that
the cover is latched.
- Press the Manual Seal key (1.8) (fig F) to perform
the sealing process. Wait for the Manual Seal key to
turn off (1.8).
- Press the UNLOCK Buttons (2) (fig G) to be able to
open the Cover (4).
- Lift the Cover (4) of the machine and remove the
bag.
- Check the seal obtained which should look like a
regular horizontal line, smooth and without wrin-
kles (fig. H). In the event of incomplete sealing,
repeat the packing cycle.
6 Vacuum packing with bags made from rolls or
with pre-cut bags.
- Lift the Cover (4) and rotate it to the open position.
- Insert the food in the bag and eliminate any liquids
or food residues from the inside of the end of the
bag that must be sealed.
- Lay the bag with its contents in front of the
machine, placing the open end inside the Vacuum
Chamber (7) (fig. I).
- Close the Cover (4) and press the two opposite
ends (fig. L), you will hear a click, which means that
the cover is latched.
- Press the Vacuum & Seal key (1.5) (fig M) to perform
the packing cycle. Wait until the Vacuum & Seal
button turns off (1.5).
- Press the UNLOCK Buttons (2) (fig N) to be able to
open the Cover (4).
- Check the seal obtained which should look like a
regular horizontal line, smooth and without wrin-
kles (fig. H). In the event of incomplete sealing,
repeat the packing cycle.
7 Using the Manual Seal function (1.8)
When packaging delicate and fragile foods (e.g. bis-
cuits, rice, coffee, etc.) you can do it in 2 ways:
A) Set the speed of the pump with the Slow button,
which lets you easily check the emptying phases and
prevent crushing. Press the Vacuum & Seal button
(1.5) to start the air extraction phase, then press the
Manual Seal (1.8) button when you feel that the air
extraction is sufficient.
B) Press and hold the Pulse & Canister button (1.6)
and when you feel that the air extraction is sufficient,
release it. Then press the Manual Seal button (1.8). At
any time, by pressing the Cancel button (1.5) you can
stop both the emptying phase and the subsequent
sealing phase and open the lid (4).
8 Packing in MAGIC VAC ® Executive Canisters or in
canisters sealed with MAGIC VAC ® Universal
Lids.
ATTENTION: Only use MAGIC VAC ® canisters since
they are resistant to the vacuum created by the
MAGIC VAC ® (Mod. P0211ED) , while other types of
canisters could implode due to the vacuum obtained
