with the machine and cause injury.
MAGIC VAC ® Universal Lids, available in two diame-
ters - 100 mm and 125 mm - are to be used with food
storage jars, casseroles and tempered glass bowls.
MAGIC VAC ® Universal Lids work exactly like the Lids
for MAGIC VAC ® Executive Canisters.
ATTENTION: With MAGIC VAC ® Universal Lids, do not
use plastic or glass canisters that are not made for
vacuum packing since they could implode due to the
vacuum pressure obtained with the machine and
cause injury.
- Fill the Canister leaving a space of at least 3 cm
from the upper rim of the canister and place the lid
on the canister. Turn the knob to the "VACUUM"
position (fig. P).
- Using the Connection Tube (15), connect the Knob
on the lid of the Canister to the air intake
ACCESSORY PORT (3) on the machine (fig. O).
- Do not close the lid (4). If this occurs, open the lid
or cancel the operation by pressing the Cancel but-
ton (1.5).
- Press and hold the Pulse & Canister button (1.6) (fig
O) until the machine turns off.
- Detach the tube from the canister knob.
- Turn the Canister Lid knob to the "CLOSED" posi-
tion.
- To open the canisters, turn the knob to the "OPEN"
position; you should hear the air whistle as it re-
enters the canister. This sound is your guarantee
that the contents were vacuum-packed.
9 Packing in MAGIC VAC ® Family canisters
These are multiuse canisters, ideal for storing prod-
ucts that are used frequently like dry and fragile
foods; powdered foods and fruits and vegetables,
fresh as well as blended or pureed. Due to their trans-
parency and design, they are attractive on kitchen
shelves and guarantee excellent visibility of their
contents.
- Fill the Canister leaving a space of at least 3 cm
from the upper rim of the canister and place the lid
on the canister.
- Using the Connection Tube (15), connect the can-
ister lid to the air intake ACCESSORY PORT (3) on
the machine (fig. Q).
- Do not close the lid (4). If this occurs, open the lid
or cancel the operation by pressing the Cancel but-
ton (1.5).
- Press and hold the Pulse & Canister button (1.6) (fig
O) until the machine turns off.
- Detach the Tube from the canister lid.
- To open round canisters, press the center button
(16), to open square canisters, first press the release
(16a) and then open the safety closure (fig. Q).
10 Packing in glass jars sealed with metal lids
(Leifheit type).
In order to perform the packing cycle in jars sealed
with metal lids, you must use the Large Lid
Attachment. Proceed as follows:
- Fill the jar leaving a space of at least 3 cm from the
upper rim of the jar.
- Using the Connection Tube (15), connect the Lid
Attachment (17) to the air intake ACCESSORY PORT
(3) on the machine. Set the Lid Attachment directly
on the jar with only the Lid (18) and push it down,
ensuring that it is correctly attached (fig. R).
- Do not close the lid (4). If this occurs, open the lid
or cancel the operation by pressing the Cancel but-
ton (1.5).
- Press and hold the Pulse & Canister button (1.6) (fig
O) until the machine turns off.
Make sure the Lid Attachment seals by holding it
down with your hand.
- Detach the Connection Tube(15) from the Lid
Attachment (17). Remove the Lid Attachment (17)
from the jar.
- Apply and securely screw on the Ring (19) supplied
with the jar (fig. R).
- To open a vacuum-packed glass jar sealed with a
metal lid, use the proper Lid Opener with the writ-
ten side up. This accessory allows the Lid to be
reused. Position the Lid Opener as in fig. S and
delicately apply pressure until the vacuum seal is
released. Remove the metal Lid.
11 Packing with the MAGIC VAC ® Bottle Capper
Il MAGIC VAC ® Bottle Capper can be used for capping
partially full bottles of wine or non-sparkling drinks,
for example. The MAGIC VAC ® Bottle Capper will let
you vacuum-seal the bottle, maintaining quality and
flavor for a longer period of time.
- Using the Connection Tube (15), connect the air
intake ACCESSORY PORT (3) on the machine with
the MAGIC VAC ® Bottle Capper (20) (fig. T). Firmly
push the Cap in the bottle.
- Do not close the lid (4). If this occurs, open the lid
or cancel the operation by pressing the Cancel but-
ton (1.5).
- Press and hold the Pulse & Canister button (1.6) (fig
O) until the machine turns off.
- Immediately detach the tube from both the Bottle
Capper and the machine.
- To open a bottle sealed with the MAGIC VAC ®
Bottle Capper, simply remove the cap from the
bottle. You will hear the air entering the bottle.

13 Rapid Marinating
Marinating is the best method for adding flavor to a
meat or game dish and tenderizing it. Food is mari-
nated in just a few minutes when it is vacuum-packed
because the vacuum-packing process opens the
pores in the food, allowing for greater and faster
absorption of the marinade.
Using the exclusive Rapid marinating function, the
machine maintains the vacuum for several minutes
and then releases it, allowing the food to "rest" for 30
seconds. This process will be repeated several times.
The pulsating vacuum and rest action allows for a
much faster marinating time.
The entire cycle lasts about 12 minutes.
Proceed as follows:
- To marinate meat, fowl and fish, poke the surface
of the food and place it in the 2.5 liter square
MAGIC VAC ® Executive canister, covered with the
marinade of your choice, leaving an air space of
about 3 cm from the upper rim of the canister, and
place the cover on the canister.
