RANGE
y A mini self-service bain-marie capable of taking 3 GN 1/1 containers and featuring a plate dispenser, two separately adjustable hot air
steam cabinets for maintaining temperature, and a lid-drawer at the top of the bain-marie tub.

y Bain-marie: 3 GN 1/1 containers or 2 GN 2/1 containers + 1 GN 1/1 containers with a maximum height of 200mm
y Plate dispenser: 65 plates (adjustable for diameters from 200 to 310 mm). Maximum capacity, the exact number of plates depends
upon their thickness.
y Can adapt to weight of plates by adding or removing springs
y Hot air steam cabinets: 3 GN1/1 containers, H 100
y All of the above components are separately monitored by a 0 to 100°C thermostat.
USAGE
y The bain-marie and hot air steam cabinets are solely for maintaining temperature levels; they cannot be used to cook or reheat food.
y Current legislation demands that food be loaded at a temperature above 63°C.

ELECTRICAL CONNECTION
y A spiral flex - two-phase, ground, 2.5 mm
y The appliance must be plugged into a female single-phase 16 Ampere grounded socket, and connected to a high-sensitivity differential
breaker and protected from over-current.
y The appliance cannot be plugged in without a single-phase socket. We will not be held responsible for any modifications.
y Before connecting or disconnecting the cable, always make sure that the illuminated on/off switch on the control panel is in the 0
position.
OPERATION
y To use the appliance :
- Turn the on/off switch to 0.
- Plug the two-phase ground plug into the power mains.
- Turn the on/off switch to 1.
y Make sure the drain valve is closed and the appliance is disconnected.
y Fill the tub up with hot water as far as the mark located on one of the tub's vertical panels :
- The lower mark for use with GN 1/1 containers, with a height of 200 mm.
- The higher mark for use with GN 1/ containers whose height is less than 200mm.
y To preheat the water quicker, place the lids on top of the tub or pull the lid into the forward position.
y The thermostat regulates the water temperature. To keep food above 63°C, set the thermostat to 100°C.
y Water must be preheated to a minimum of 90°C before food is inserted.
y The bain-marie may now be used.
Emptying the tub :
y Place a receptacle under the lower tray or connect a tube to the valve.
y Open the valve and empty. Be careful: the temperature of the water will be 90/100°C.
y Adjust the spacing of the plate stops in accordance with their diameter by lifting and inserting the stop pins into the hole required.
Adjustment is possible for plates with diameters between 200 and 310mm.
y Adjust the number of springs in accordance with the weight of the plates :
For any other weights, perform tests prior to use.
Each silo is equipped with round guide tubes (3 or 4 according to the model) around which the plate support is able to slide. Remove
the springs, beginning with those closest to the guides, always removing the same number per guide.
If possible, remove a spring around each guide. This method avoids unbalancing the system.
