WORKING PRINCIPLE

This is a small press which exerts a pressure up to 700 kg to mould, as a disc, a rounded risen
dough loaf to make a pizza.
The thickness and the diameter of the dough disc depend on several parameters that are set by
the user, for example the distance between the plates and the temperature of these plates.
In fact, the two plates are heated to assure an easier sliding of the dough along the surface of the
plates during the pressing operation. However, it is necessary that the plates do not exceed the
temperature limit of 170°C to avoid baking the dough during the pressing operation. The
temperature of each plate can be set independently. As a matter of fact, the lower plate usually
is kept at a temperature of about 10°C higher than the upper one because it has been proven
to cool itself sooner than the upper plate. An important parameter to remember for setting the
temperature of the two plates is the kind of use you think to carry out in terms of productivity. When
you have to mould many risen dough loafs it will be necessary to set a higher temperature for
the plates. The temperature of the plates is assured by the means of two electric resistors (one
for each plate); it is measured by thermocouples and regulated by thermostats (a process one
and a safety one for each plate)
The iron plates allow keeping the temperature as constant and uniform as possible. They are
chromium plated in thickness and hardness to make the sliding of the dough easier during the
pressing operation.
The machine allows also the setting of the pause time of the lower plate at the maximum height
to assure a better moulding of the dough.
The setting of the parameters above mentioned depend mainly on the kind of dough you want to
work as well as the degree of risen and the temperature of the dough itself.
Changing the pause time of the lower plate and the distance between the plates it is possible to
obtain any diameter and any thickness of the dough.
