To adjust the blade end up or down, pull out the knife lever pedal pin and
loosen the nut holding it, then adjust the yoke up or down and put them
back together.
NOTE: A loose locking screw can cause the blade to vibrate during
operation, so make sure it rests firmly on the washers.

Cleaning and maintenance
a)
Use only non-corrosive cleaning agents for cleaning surfaces.
b)
After each cleaning, all the parts should be dried well before the unit is used
again.
c)
Store the unit in a dry and cool place protected from moisture and direct
sunlight.
d)
Do not spray the unit with a stream of water or immerse it in water.
e)
Perform regular inspections of the unit, checking technical fitness and any
damages.
f)
Use a soft cloth for cleaning.
g)
Do not use sharp and/or metal objects (e.g. wire brush or metal spatula) for
cleaning as they may damage the surface of the appliance material.
h)
Blade sharpening:
The upper blade has two cutting edges that are ground with a 50 mm undercut.
Flip it over to expose a new cutting edge as soon as one edge is blunt. The
blade can be sharpened on a metal grinder by grinding both wide sides of the
blade.
The lower blade has one cutting edge with a 50 mm undercut and a 25 mm
front undercut. They can be re-sharpened on a sharpener by grinding the wide
side of the blade with a 25 mm undercut.
