7.3.3. BLAST CHILL OR SHOCK FREEZE CYCLE WITH 2 – 3 – 4 STANDARD PIN PROBES
This cycle can be run with several standard single-point pin probes.
Select the cycle desired, e.g.:

When the temperature of a probe reaches the value entered for the blast chill/shock freezer cycle
selected, this is signalled with a buzzer (optional) , and DISPLAY 3 fl ashes the number of the relevant
pin probe (Fig.7).
If in the meantime the other probes reach core temperature, the signal is placed in a queue.
The signals terminate and the buzzer (optional) switches off only when the door is opened.

Once the door is closed and the other probes reach core temperature, a new signal appears on
DISPLAY 3 (Fig.8) which indicates the number of the probe of the blast chilled/shock frozen product.
If blast chilling is not complete within the determined time, the buzzer (optional) activates for one
minute and can be switched off by pressing any button.
The blast chill phase continues but the clock and HACCP symbols fl ash and the alarm is memorised in
(Fig.9)

The alarm cancels automatically when passing to the conservation phase and the HACCP symbol
remains on.
Progress from the blast chill phase to the conservation phase occurs only when all the pin probes
have reached the desired core temperature on the basis of the cycle selected.
Upon termination of the cycle the machine automatically proceeds to the conservation phase.
At the end of the cycle the machine moves into conservation phase automatically, see ch. 7.3.5.

7.3.4. BLAST CHILL OR SHOCK FREEZE PERSONALIZE CYCLE
It is possible to modify the breakdown/freezing cycle:

The breakdown or freezing cycle is divided into three phases where it is possible to modify the following
