o aid in the prevention of food from sticking it is recommended that the griddle
T
is "seasoned" prior to use. This seasoning process, as well as general use, will
change the appearance of the griddle

•
We recommend operating the griddle on its highest setting for 15-20 min-
utes prior to seasoning the griddle. This aids the removal of any oils that
were used in manufacturing and cleans the griddle surface. After 15-20
minutes turn the griddle off and allow it to cool.
•
To season, pour a teaspoon of peanut or vegetable oil in the center of the
griddle. Use a paper towel to spread the oil evenly. Be careful not to use
too much oil and wipe off any excess.
•
Ignite the griddle burner, per the lighting instructions, and turn the control
knob to the low setting. Heat the griddle until the oil begins to smoke. As
soon as the oil begins to smoke turn the griddle off and let it cool. Once
the griddle has cooled, wipe of any excess oil.
•
The griddle is now seasoned and ready to use. The appearance of the
griddle will be slightly brown or bronze and will darken with use.

Important: The stainless steel cover must be in the open position prior
to igniting the griddle burner. The cover is intended to protect the grid-
dle and should never be operated with the cover in the closed position.
•
Ignite the griddle burner per the lighting instructions provided in the Prod-
uct Guide. A match-light chain and hole is provided for your convenience.
•
Pre-heat the griddle on the desired temperature setting for 10-15 minutes
– longer if weather conditions require.
•
Once the griddle is pre-heated it is ready for use. The temperature can
be adjusted while cooking by turning the temperature control knob as
needed.
•
It is recommended to use a small amount of oil when cooking on the
griddle in order to prevent food from sticking.
•
To turn the griddle off, turn the control knob to the off position and turn
off the tank or gas source.

Periodic care, maintenance and cleaning will help to ensure a long life
for the griddle. After every use, it is necessary to clean the griddle and
grease tray.
•
Using a metal spatula, scrape excess grease and food debris into the
grease tray.
•
Once the griddle has cooled it can be cleaned with warm soapy water
and an abrasive pad or stiff brush. The griddle is removable and can be
removed for cleaning if necessary.
•
After using the griddle, always remove the grease tray located in the front
of the griddle. Carefully pull the grease tray towards you and lift it out.
Then, dispose of the grease properly and clean the grease tray. The grease
tray can be cleaned with warm soapy water or can be placed in the dish-
washer. Do not allow grease to accumulate in the tray from multiple uses.
•
In order to prevent surface rust it is always recommended to keep your
griddle well seasoned. If the griddle is not used for a period of time, it must
be re-seasoned. Every time the griddle is washed, it must be re-seasoned.
A light coat of oil will keep the griddle well seasoned and protected.
•
It is normal for the griddle to darken and become discolored over time.
