· Only fry in small quantities. Large quantities increase the frying time and the food will
absorb more oil.
· If food items have been washed beforehand, they must be dried well before you put them
in the hot oil.
· Vegetables ,meat and fish should be cut into small pieces before frying. Small pieces reduce
the frying time and the food will therefore absorb less fat.
· Some food items should be coated with breadcrumbs before they are dipped into the hot
oil. Ensure that the breadcrumbs stick as well as possible to the food --if they fall off during
frying, this will contaminate the oil.
When is the food cooked?
If the results of frying do not match what it says for the cooking times in your recipe, It could
be for the following reason/s:
· Condition of the food e.g. frozen ,
· Size of food items,
· Volume of food,
· Temperature of the cooking oil
What type of oil/fat should you use?
A huge range of different oils and fats are available, but only some of them are actually
suitable:
· The oil/fat must be suitable for frying at high temperature. The smoking point of the
