- During operation the oven surfaces, and in particular the glass,
become hot, so that care must be taken not to touch them so as to
prevent scalding.
- When opening the door make sure you stand at a safe distance
from any hot steam that may come out of the baking chamber.
- Never allow unauthorised persons to approach the oven.
- There is a safety handle on the inside of the door, to be used in
case of accidental closure of the door with somebody inside the
baking chamber. To open the door from the inside, turn the
safety handle clockwise.
Do not overload the trays with items and always abide by the
minimum space required between the items and the tray above.
Before placing items inside the oven, it is advisable to set the oven to
a temperature above the envisaged set point for cooking and then to
lower the temperature to the required setting.
For more even results, we recommend avoiding the use of
temperatures above those recommended for the type of product being
baked.

PUTTING
THE
SERVICE
The appliance is turned on by setting the knob of the main switch
(fig.2 part 2) to position "1" . Then close the main breaker 0/1 (fig.2
part.3)
The control panel is located on the front right-hand upright of each
baking chamber (fig.10):
1)
Colour graphic display
2)
Neutral keys: for each key, the icon for the associated
function is represented on the display: this varies
according to the screen being viewed
3)
Open/Close steam exhaust valve ("Valve")
4)
On/Off ("Start/Stop")
5)
Steam button ("Steam")
6)
Eco Stand-by function enable/disable ("Stand-by")
7)

The user interface has the following viewing areas (fig 10):
A)
TOP BAR: the viewing area in the top part of the display.
Views date, current time and any status icons (switch on timer, alarm
warning device \etc.).
B)
WORKING AREA this is the main viewing area, divided
horizontally into three areas, each with an associated baking
parameter that can be modified directly by pressing the
corresponding neutral keys. This viewing area is also used to view
the menu items and the different setting screen (programs, lighting,
etc.) and in case of anomaly, it shows the mistake identified.
C)
STATUS BAR: the viewing area in the bottom part of the
display. A coloured label that shows the current appliance status
("heating", "preparing", "oven ready" and "cooking") and the oven's
icon status (manual mode/programs, steam
position, suction hood status if provided, etc.).
To improve the experience of the user, the interface, thanks to the
potential of the graphic display, gives a specific colour to each
function/status of the appliance. This allows the user to know its
status at all times:
- WHITE: standard baking mode
- GREEN: standby function enabled
- ORANGE: booster function enabled
- LIGHT BLUE: menu, program settings
- RED: alarm
The six neutral keys, to the right and left of the graphic display (fig.
10 – part 2), can have the following main functions:
+: increases the parameter
- decreases parameter
↑ : moves the selection "Up"
↓ : moves the selection "Down"
→: moves the selection "Right"
←: moves the selection "Left"
√ : ok, confirms the selection
← : cancels, goes back without confirming (" return")
and other symbols described below.

NOTE:
The electronic controls allow more precise and rapid
regulation of the oven. However, they are by nature more
delicate than traditional ones.
To ensure that they remain in a proper state of operation it is
recommended that the buttons on the electronic control panel be
activated by pressing lightly with one finger, avoiding excessive
pressure or impact.
The oven allows to set the baking temperature, the preheat
temperature, the baking time and the amount of steam to be injected
in the baking chamber. For more information on the "Preheating"
function see paragraph 3.2.3.
It is possible to use the oven in "MANUAL" mode or to use the
"PROGRAMS" by recalling one of the baking programs stored in
memory.
SWITCHING ON WITH MANUAL PARAMETER
SETTING
When turned on the main screen shows the baking parameters in red
(Fig. 11a). Press the "+" and/or "-" buttons to increase and/or
decrease the parameter. Then adjust the temperature, the desired
cooking time and possibly the amount of steam to be injected into the
baking chamber. Once the required value has been set it is not
necessary to confirm, as the parameter is received and implemented
in real time.
The baking chamber temperature adjustment is set for a maximum
temperature of 270°C (518°F). If, due to an anomaly, this threshold is
exceeded, the safety thermostat intervenes to block oven operation by
switching it off. The screen will display the alarm situation that
occurred (fig. 23).
The alarm signal (visual and acoustic) will continue until the "OK"
button is pressed. Wait until the oven cools down. Unscrew the cap
from the safety thermostat (fig.2 part.4) and press down.
The button will reset the thermostat and after the "Start/Stop" button
is pressed, the oven will restart normally.
Refit the protective cap on the safety thermostat to prevent this
instrument from becoming damaged and affecting the operation of
the oven.
If this operation is carried out without waiting for the oven to
cool down, the manual safety thermostat will not allow the oven
to be reset.
When an anomaly occurs, it is necessary to request the
intervention of the technical Assistance Service.
The cooking time can be set from 1 minute to 10 hours. By pressing
the "-" key consecutively, the "Time" parameter is deleted and the
timer icon is shown on the corresponding "+" button (Fig. 12a pos.
U) indicating that the "Manual" mode is enabled (see point 3.2.2).
Press the button with this icon to reactivate the "Standard" mode by
selecting the desired cooking time.
The oven can be set from 0 to 30°C (54°F) to check if it reaches the
desired temperature with respect to default temperature before
starting to bake. To change the parameter enter MENU, select
PREHEATING, press OK, select the desired value and press "OK" to
confirm. The main screen will be updated with the new preheat mode
setting. For more information on the "Preheating" function see
paragraph 3.2.3.
