Baking wafers
Bring 1 full tablespoon (approx. 25–30 g) of batter (p. 28 and following pages) onto the
centre of each silicone pan and spread it across the surface using the spatula so that the
batter is levelled off with the rim of the pan and the extending squares are covered
.
Gradually place pans – one after another, always about 1 minute apart – into an oven
pre-heated to 150 °C. Begin by placing the fi rst pan into the heated oven. Wait one minute
before placing the second pan into the oven and proceed in the same way with the third
and fourth pans, always waiting one minute
.
Bake the ice cream wafers until they are golden brown across the surface, approx. 15 minutes.
When the fi rst wafer is baked, remove it from the oven and immediately shape into a cone
or cup. Continue by removing the second wafer and shape it immediately. Proceed in the
same way with the third and fourth wafers.
