Potato Salad with Chives

Ingredients:
2 lb. skinned potatoes, peeled and cut into 1/2-inch thick slices
2 tbsp white vinegar
2 tbsp Dijon mustard
1/2 cup mayonnaise
1/2 cup chopped fresh chives
Salt
Pepper
Method:
1. Fill water reservoir to MAX.
2. Place the potatoes equally into two steamer baskets.
3. Put the steamer baskets on the base and cover with lid.
4. Set timer to 20 minutes.
5. After 20 minutes, remove the potatoes from the lower steamer basket &
transfer them to a serving bowl.
6. Transfer upper level potatoes to lower level and steam for an additional 5
minutes.
7. Transfer potatoes to serving bowl with first batch.
8. Sprinkle the potatoes with white vinegar. Stir gently with a spatula so the
potatoes absorb the vinegar.
9. In a small bowl, mix the salt, pepper, mayonnaise and mustard.
10. Add the chives and stir.
11. Add dressing to the potatoes, gently tossing the mixture.
12. Cover and refrigerate for up to 2 hours before serving.
