Stuffed Red Peppers
Ingredients:
2 Red peppers
1 boneless, skinless chicken breast
1 cup cooked white rice
4 scallions
1 can tomato sauce
Salt
Method:
1. Cut peppers in half lengthwise, remove seeds. Reserve.
2. Cut up chicken breast into small, half-inch pieces. Chop up scallions. Mix
chicken, scallions, rice and tomato sauce in a bowl.
3. Stuff peppers with chicken and rice mixture. Place in steamer basket, and
steam for 30 minutes.
