Positive Temperature Blast Chilling
This cycle lowers the temperature at the core
of the product from + 90 ° C to + 3 ° C in the
shortest time possible and within a maximum time
of 90 minutes. The end of the cycle is determined
by the achievement of the value + 3 ° C read by the
core probe.
Selecting the positive blast chilling cycle, the
system displays following screenshot :
