SWITCH-ON KNOB (ELECTRIC).

It performs two different functions:
1. Heating speed.
2. Operating phase Start/Stop.
GREEN
INDICATOR

(ELE): The indicator is subordina-
ted to use of the switch-on knob.
Lighting of the indicator signals the
operating phase.
ORANGE
INDICATOR

(ELE): When present, the indica-
tor is subordinated to use of the ther-
mostat knob. Lighting of the indicator
signals the heating phase.

performs one function:
1. Temperature regulation.

INSTRUCTIONS FOR USE
STARTING PRODUCTION
Before proceeding with the opera-
tions, see chapters 2 and 5
Before proceeding with these
operations, see "Daily activation".
It is strictly forbidden to use
as a fryer.
The "Bain-marie" appliance
must be used with tap water in-
side the cooking compartment.
Any other use is improper and there-
fore dangerous.
The "Chip Dump" appliance
must be used without water.
The potatoes must be placed
inside the cooking compartment.
Any other use is considered impro-
per and therefore dangerous.
LOADING WATER INTO COOKING
COMPARTMENT OF BAIN-MARIE -

Disconnect the electrical power
supply upstream the appliance
whenever you need to drain
the water.
LIGHT
The water inside the cooking
compartment must not leak into
the trays or in the same cooking
compartment.
Place the cooking compartment water
LIGHT
drainage gate valve is at the "Closed"
position (Fig. 1).
Pour tap water into the cooking com-
partment respecting the "Minimum/
Max" level (see notch inside cooking
compartment Fig.2).
Having successfully loaded the water,
proceed loading the trays Fig.3).
