- Increase the temperature to 270°C (520°F) and leave the chamber
operating for about 1 hour. If there is a great deal of steam inside the
chamber, open the door for a few minutes to let out the steam and
then close it again.
- (Only pizzeria) increase the temperature to 400°C(755°F) and leave
the chamber operating for about 1 hour. If there is a great deal of
steam inside the chamber, open the door for a few minutes to let out
the steam and then close it again.
- Wait for the temperature to cool to ambient levels before switching
the oven on again. If there is a great deal of steam inside the
chamber, open the door for a few minutes to let out the steam and
then close it again.
This procedure serves to remove any moisture built up inside the oven
during the production, storage and shipping stages.
NOTE:
It is possible for the appliance to give off unpleasant
odours during the operations mentioned above. Ventilate the area.
WARNING!
Do not open the oven door for long periods,
especially at high temperatures; this is to prevent the hazards of
burns and overheating of parts close to the door.
WARNING!
Only use the oven for baking for the first
time after carrying out the above procedures, which are absolutely
essential for perfect operation.
WARNING!
Never bake any items the first time that the
equipment is switched on or when it is switched on after a long
period of disuse.
NOTE:
When switching on the oven again, to increase the
duration of the component parts (refractory surfaces), it is
necessary to prevent heating too suddenly. Each time, before
reaching the set point for cooking, keep the oven at a temperature
between 120°C (250°F) and 160°C (320°F) for at least 40 minutes.
3.2.2
PUTTING THE BAKING CHAMBER INTO SERVICE
ECO SMART BAKING MODE
SMART BAKING mode is the standard oven management mode. It
allows 1 temperature and 2 power levels to be set (in percentages) for
the ceiling and floor (fig. 17).
To enable the SMART BAKING mode, if not already active, press the
"MENU" key, select SMART BAKING with the "SELECTION" (↑
and ↓) keys and then press "OK".
In this mode, it is possible to use the oven in "MANUAL" mode or to
use the "PROGRAMS" by recalling one of the baking programs stored
to memory.
SWITCHING ON WITH MANUAL PARAMETER SETTING
To set the baking parameters, use the corresponding "+" and/or "-" keys
to increase and/or reduce the parameter. Adjust the power levels for the
ceiling or floor. These values range from 0 (power off) to 100%
(maximum power). To set the "Temperature" parameter, since the
display shows the temperature measured inside the baking chamber in
real time, when the corresponding "+" and/or "-" key is pressed, the
current setting will be shown in red ("Set temperature"). Pressing the
keys again will change the parameter. Once the required value has been
set it is not necessary to confirm, as the parameter is received and
implemented in real time.
The baking chamber temperature adjustment is set for a maximum
temperature of 450°C (850°F) for the pizzeria and 270° C (520°F) for
pastry. If, due to an anomaly, this threshold is exceeded, the safety
thermostat intervenes to block oven operation by switching it off.
The screen will display the alarm situation that occurred (see 3.6).
The alarm signal (visual and acoustic) will continue until the "OK"
button is pressed. Wait until the oven cools down.
Unscrew the cap from the safety thermostat (item B fig.1) and press
down.
The button will reset the thermostat and after the "OK" button is
pressed, the oven will restart normally. Refit the protective cap on the
safety thermostat to prevent this instrument from becoming damaged
and affecting the operation of the oven.
WARNING!
If this operation is carried out without waiting
for the oven to cool down, the manual safety thermostat will not
allow the oven to be reset.
When anomalies occur, it is necessary to request the intervention of
the Technical Assistance service.
To turn the heating elements on and start heating up the baking
chamber, simply press the "START" button, as suggested in the text
line with explanatory messages (status bar), which will say "PRESS
START". When switched on, the baking chamber lighting will also
switch on automatically. "Lightning bolts" to the left of the power levels
switch on in real time to show that the heating elements are on. This
graphic display also provides information on the power level employed
by the heating elements at any time, shown by how much of the "bolt"
itself is lit up. During the initial stage following the heating element
switch on, the status bar will read "HEATING". This message is
alternated with another: "READY IN xx MIN", where xx is the
estimated time needed by the oven to reach the set temperature. During
this stage, the display will also alternate the real temperature with the
set one.
NOTE:
The estimated time required for the oven to reach the
required temperature is indicative and will vary significantly
according to the parameters set during the switching on stage.
SWITCHING ON IN PROGRAM MODE
Using the oven in Program mode enables the operator to work
"automatically", i.e. to save and/or call up a series of baking programs
with pre-set parameters from the memory (internal or external). Each
program can store up to 3 baking phases.
The appliance status is confirmed in Program mode by the name of the
program in the status bar. To choose the required program, press the
"MENU "key, select PROGRAMS with the "SELECTION" keys, then
press "OK". Scroll through the list in the PROGRAMS submenu as far
as the item SEARCH BY NAME and confirm by pressing "OK". At
this point the display will show an alphabetical list. Scroll through the
selection until the initial letter of the program being searched. Press OK
to confirm and the display will show a list of all of the programs in the
memory, in alphabetical order, starting from the letter selected. Move
the selection to the required program and press "OK". The program will
be loaded.
The status of the appliance in Programs mode is confirmed by the
program name in the status bar, alternated with the message PRESS
START. To enable the heating elements and start the heating stage with
the parameters for the selected program, press the "START" key.
NOTE:
If there are no pre-loaded programs, the display will
show the string <LIST EMPTY> meaning it is necessary to upload
at least one baking program as described in section 3.3.
BAKING STAGE
Only when the oven temperature has reached the temperature set
(unless a "delta T" has been set), will a buzzer sound be emitted
Intermittently, together with the message BAKING in the status bar.
At this stage, the display will always show the temperature really
measured.
During baking, it is possible to edit the parameters in real time using
the corresponding "+" and "–" keys. If a program has already been
pre-loaded, the edited values will only become effective for the baking
in progress: the original program values will not be changed. To
change the parameters of a program, follow the instructions in
paragraph 3.3.
In case of using a programme with more than one baking stage, enable
the first stage of the programme using TIMER 1 (see "BAKING
TIMER"), which sets the time for the ongoing stage. At the start of
each baking stage, the user-defined settings (temperature, time and
power) are pre-loaded automatically, while an acoustic signal,
consisting of 1, 2 or 3 beeps will sound for the start of stage 1, 2 or 3
(if available).
To cut off the power supply to the heating elements, press the "STOP"
key. The lighting inside the baking chamber will switch off
automatically. together with the oven.
BAKING TIMER SETTING
The oven has 2 independent "baking timers" which can be controlled
by direct access, using the dedicated keys on the control panel (fig.16
item Q). The baking timers operate with countdown logic. When the
set time is up an acoustic and visual ("flashing") warning will sound to
inform that the set time is up. The buzzer is different in terms of
intermittence type: Timer 1 (T1) emits a continuous acoustic signal;
Timer 2 (T2) emits an intermittent sound signal. The buzzers have a
finite duration setting, from 0 to 60 seconds (default settings are 30
seconds). At the end of this time, the signal will end and the timer will
return to the set value. It is possible to interrupt the sound signal early
by pressing the key for the timer.
To use the baking timer, first enable the TIMERS viewing mode by
pressing the T1 or T2 keys. Activation is signalled by the fact that the
status bar will show the settings and the timer status (on a white
background) (fig.18 –item Q) in place of the messages about oven
status (on a red background) usually shown as standard.
The timer status is shown in the following symbols:
timer in STOP mode with countdown ready to
activate it; timer in PLAY, countdown enabled
timer in PAUSE, countdown in pause
