Sauces
Saucescontainingsugarsand fats can causeflare-ups,and
your food may burn. In general, apply these saucesduring
the final 10 minutesof cooking. Keepin mind, use of
excessivesauces or glazes will also requireextra cleaning
afterwards.
Marinades and Rubs
To enhancethe flavor of grilledfoods, a liquidmarinadeor
dry rub can be used prior to cooking. Meatcan be either
soakedor injectedwith liquidmarinade up to 24 hoursprior
to grilling. Dry rubs can be applieddirectly to the meat
immediatelybefore grilling.
Wood Chips
For extrasmokeflavor when grilling, try adding wood
chips. Soak the chipsinwater for approximately30
minutesbeforeadding to a smokebox or pan. Place
smoke box or panon top of thecooking grate abovethe
flame. Turngrill on high until the woodstarts to smoke.
Reduce heatto desiredtemperaturefor cooking,and
placefood on cooking grate asdesired. Close lid to
retain moresmoke. Hardwoodvarietiesthat work
particularlywell withgrilledfoods includeAlder, Apple,
Cherry,Hickory,Mesquite,and Pecan.
Skewers
Metal skewersshould be flat, with long handles. Round
skewersallowfood to roll whenturned, soit may notcook
as evenly. Usemetal skewerswhen cooking meat
kabobs. Woodenskewersshould be soakedinwater for
an hour before use,and are best usedfor quickcooking
foods suchas vegetablesand fruits.
Utensils
Usetongs or a spatulato handlethe food insteadof a
fork, and don't turn the foodtoo
often. Piercingthe food
with a fork will release
juices that you want in
the meat,and may
causeflare-ups.
Why Clean?
We've all heardthe saying 'An ounceof preventionis worth
a poundof cure'. This is great advice whenit comes to
keepingyour grill clean.
RoutineCare
Periodic cleaningof this grill is necessary,as grill fires can
occur when greaseand food debriscollect in the bottomof
the grill. After each use, removeany remainingfood
particlesfrom thecooking grate and insideof the grill using
a grill brush. Do this after the grill has cooleddown. This
grill is not designedto be 'burnedoff' byclosingthe lid and
turningthe burnerson Highfor an extendedtime. The
excessiveheatgeneratedcan cause leftovergreaseto
catch fire, and can causepermanentdamage to your grill.
