2.3 Grounding
• The oven must be connected to an effi cient
grounding system.
• The yellow/green power supply cable must be
secured in the clamp marked with the groun-
ding symbol
(see fi g. 5).
• The oven must be included in an equipoten-
tial system the connection of which will have
to be performed using a cable with a minimum
section of 10 mm
connected to the clamp (A
²
- Fig. 5) marked with the symbol placed on the
backside of the oven.
• It is recommended to connect the supply cable
to the oven inside a metal tube adequately fre-
ed of shard edges or in a tube made of suitable
rigid plastic material.

2.4 - Water supply connection
• Connect the water supply tube to the G 3/4"
connection piece of the oven screwing in the
pipe union (A - fi g. 6). Insert an appropriate
mechanical fi lter and a shut-off valve in the
circuit.
• For a proper operation of the ovens the
maximum hardness of the water must not
exceed 3 °F in order to prevent limescale from
building up inside the tubes and the cooking
chamber.
If necessary, install an adequate water decal-
cifi er before the water circuit.
• The admitted water supply pressure is of a
minimum of 200 kPa, maximum of 300 kPa.

2.5 - Disposal of used products
• The product was designed and assembled with
high-quality materials and components that
may be recycled and reused.
• If on a product there is the symbol of a whee-
led bin, covered by an x, it means that the pro-
duct meets the requirements of the Community
Directive 2009/96/EC.
• Get informed on the modality of collection
of the electric and electronic products in force
in the area where you intend to dispose of the
product.

• Observe the local regulations on waste dispo-
sal and do not dispose of the used products in
the general household waste containers.
An adequate disposal of the products helps to
prevent the environmental pollution and po-
tential damages to the health.
2.6 - Startup
Check:
• The correct installation of the oven, its stability
and perfect levelling.
• The proper realization of the electrical con-
nection, compliance of the electric cable, exi-
stence and effi ciency of the omnipolar switch
of the electric system.
• The effi ciency of the water supply system and

of the steam exhaust system (no leakage).
• The effi ciency of the cooking steam disposal
system, for instance the exhaust hood.
At this point, start the oven following the ope-
ration instructions and check the proper opera-
tion of the various functions (diff erent cooking
programs, core probe). If necessary, refer to the
paragraph on faults.
2.7 - Safety devices
The oven is equipped with the following pro-
tection and safety devices: • Cabinet safety ther-
mostat: in case of overheating of the cooking
cabinet, it intervenes by cutting off the power
supply.
• The door switch, if equipped, interrupts the
operation of the oven when the door is open:
both the heating system and the cabinet fan
motor are turned off .
• Fuse for protection of the electronic board
250V - 200mA FAST. The fuse is located in the
dedicated slot on the electronic board. Befo-
re replacing the fuse, disconnect the machine
from the power supply grid.
2.8 - Diagnosis of certain faults

2.9 - Replacement and adjustment of
certain components
CAUTION!
The replacement and adjustment of compo-
nents are extraordinary maintenance ope-
rations, therefore they shall be performed
by an authorized installation technician.
Before starting any repair or maintenance
operation you must disconnect the general
switch so as to cut off the power supply to
the machine. Also make sure that you close
the water supply faucets.
Remember to put back the gaskets, the se-
alings and the insulations inserted before
fi nishing the work.
2.9.1 - Replacement of the safety thermo-
stat
The thermostat bulb is placed to the right of the
cooking cabinet, behind the tray rack:
1) Open the right side of the oven;
2) Unscrew the bulb inside the oven cabinet;
3) Pull out the thermostat wires and unscrew
the thermostat fi xing device (B - fi g. 8) attached
on the back side of the control panel;
4) Place everything back in the original position,
the probe fi xing device and the electrical con-
nections.
2.9.2 - Oven lamp
Proceed as follows:
1) Open the oven door (A - fi g. 9).
2) Turn the plastic locks (B - fi g. 9) blocking the in-
ternal glass and lay it open (like opening a book).
3) Replace the light bulb (C - fi g. 9).
4) Reassemble everything in reverse order.

Possible causes
2.9.3 - Door gasket
• The gasket is pressed in, therefore it must be
extracted by pulling it out and inserted by pres-
sing it in again.
This operation must be performed manually so
as not to damage the gasket.
2.9.4 - Fan and motor
• From inside the oven remove the motor pro-
tection, unscrew the screw that sets the fan lo-
ose, pull the fan out after having removed the
panel on the left side of the oven.
