6. RECIPES

MANGO & LIME SMOOTHIE
2 mangoes, deseeded & cubed
125ml of full fat yoghurt
Zest of 1 lime
Juice of half a lime
80ml of cold water
• Place all the ingredients into a high sided bowl. Using the blending attachment, gradually start to
process on speed 5 (using an up and down motion for approximately 30 seconds or until you have
reached your desired consistency).
• Serve immediately.
HUMMUS
Serves 6
400g tin of chickpeas (230g drained weight)
1 tbsp lemon juice
1 garlic clove, crushed
1 tsp ground cumin
Pinch of sea salt
1 tbsp tahini
2 tbsp olive oil
4 tbsp water or reserved chickpea water
• Drain the chickpeas and rinse, reserving the liquid.
• Place all the ingredients into a suitable tall sided container.
• Using the blending attachment, process on speed 4. You may need to scrape down the shaft using a soft
spatula. Continue to process, adding more liquid if necessary until you have a creamy puree.
• Season to taste and serve.
