-Machine body: clean the ma-
chine body with a damp cloth
or sponge and rinse with water.
Dry carefully.
SHARPNER:
lift the sharpener togeth-
er with its support column.
Tighten the grip (Fig. 9, A) and
remove the grinding wheel.
Remove dirt and grease using a
nylon brush.
MAINTENANCE
Blade sharpening
The frequency and duration of
sharpening depends on the use
made of it.
CAUTION Sharp blade,
!
cutting hazard! When
the blade is not covered by the
guard, be extremely careful to
keep your hands as far away
from the unprotected area
as possible. Use protective
gloves.
Follow the instructions below
for sharpening the blade:
- Remove any type of product
that was previously positioned
on the sliding meat table (Fig.
2, 4).
- Clean the blade, freeing it of
residual grease (refer to the
chapter on cleaning non-re-
movable parts: blade).
- Make sure that the ON but-
ton (Fig. 2, 18) is on.
- Check that the guard (Fig. 2,
11) is covering the blade prop-
erly.
- Lift the sharpener cover (Fig.
10-A): SHARP.02 will appear
on the display. The outer blade
protection cover (Fig. 2, 9) and
the sliding meat table (Fig. 2, 4)
will automatically move trans-
versely.
- Lift the sharpener from its
parked position (Fig. 10-B)
and rotate it in the direction of
the blade (Fig.10-C) until the
sharpening position is reached
(Fig. 10-D): SHARP.00 will ap-
pear on the display.
- Start the blade by pressing
button B (Fig. 14, B) LED ON
(Fig. 14, H).
- Press the sharpening button
(Fig. 10-E: 1) for approximately
10 seconds. After the 10 sec-
onds have passed, and while
holding down the sharpen-
ing button, pull the deburring
wheel lever (Fig. 10-E: 2) for a
couple of seconds (Fig. 10-E).
- Release the two buttons at
the same time.
-When
you
have
sharpening
and
stop the blade by pressing the
blade button (Fig. 14, B), then
lift and rotate the sharpener to
its parking position.
- Lower the cover of the sharp-
ener: the outer blade cover will
move transversely and return
to its original position.

CAUTION: risk of dam-
age! Do not over-extend
(no more than 2-3 seconds) the
deburring operation to avoid
damaging the blade.
Lubrication:
Berkel professional lubricating
oils are recommended for lu-
brication.
Use only NSF-H1 or 3H food-
grade oils. Do not use vegeta-
ble oils.

Place some lubricant in the cor-
responding lubricating point:
1. Carriage bar lubricating

point (Fig. 11-A: 1). Once the
necessary amount of lubricant
has been introduced into the
carriage bar lubricating point,
operate the flywheel to slide
the carriage a few times (Fig.
11-B).
2. Presser lubricating point
(Fig. 11-A: 2). Once the neces-
sary amount of lubricant has
been placed in the product
presser lubricating point, hold
the grip of the vertical sliding
handle (Fig. 2, 10) and have the
presser slide (Fig. 2, 3) a few
times (Fig. 11-B).
SERVICE
No user-serviceable parts are
inside. Refer servicing to qual-
finished
ified personnel. All the repair
deburring,
and replacement operations
(like blade replacement, repair
of structural parts, repair and/
or re-placement of sub-base-
plate components, or similar)
shall be executed exclusively
by personnel authorized by the
manufacturer.
In the event service is need-
ed, you may return your food
slicer to the manufacturer or
to one of the Authorized Ser-
vice Centers. For information

The blade replacement is
mandatory if distance be-
tween the edge of the blade
and the internal edge of the
guard exceeds 6 mm.
