16. Special notes
16.1 Program "QUICK"
The bread machine can prepare a loaf in a shorter duration when us-
ing baking powder or soda instead of yeast with the quick program.
To get perfect breads quickly, it is advisable to put all the liquid ingre-
dients at the bottom of the baking mould and the dry ingredients at
the top. During the initial kneading, some dry ingredients may accu-
mulate in the corners of the pan. To prevent the formation of small
lumps, use a rubber spatula when kneading the dough.
16.2 Measuring the ingredients
An important step in making good bread is the right quantity of in-
gredients. It is very important to use a measuring cup or measuring
spoon to measure the ingredients accurately, otherwise the bread
quality will be affected.
Weighing liquid ingredients
Water, fresh milk or milk powder solution should be measured using
measuring cups. The measuring cup should be in line with your eyes
horizontally. When you measure cooking oil or other ingredients,
clean the measuring cup thoroughly to remove any other ingredi-
ents.
• Dry ingredients
When measuring dry ingredients, they have to be added carefully
with a spoon into the measuring cup and levelled with a knife after
filling. Do not scoop or tap a measuring cup more than necessary.
This extra quantity could affect the balance of the recipe. Use meas-
uring spoons to measure small quantities of dry ingredients. The
measurements should be horizontal and should not be heaped since
this small difference could upset the balance of the recipe.
