2 CHECKLIST CLEANING AND SANITATION
The following procedures must be applied daily:
2.1 Antibacterial sanitization checklist

 Use the small brush to clean the internal flushing water drainage duct.
 Use the large cleaning brush to clean the inside of the beater body.
 If local health regulations permit the reuse of the food product extracted
from the machine during the washing operations ("rerun"), make sure that
the product is stored in a covered stainless steel container. When the pro-
duct is reused, skim the foam and remove it. Mix the recovered product with
the new mixture in a percentage of at least 50:50.
 On a predefined day of the week, prepare as little mixture as possible
and remove it after closing. This interrupts the "rerun" cycle and reduces the
possibility of bacterial proliferation.
 Respect the correct dilution of detergent / sanitizing products. Solutions
that are too concentrated risk damaging the parts and polluting the environ-
ment; solutions that are too weak do not allow an adequate cleaning and
sanitizing action.
2.2 Maintenance checklist
 Replace the scraping pads that are worn or damaged. Always check
that the scraping pad is always correctly assembled on both beaters fixing
points.
 Replace the O-rings if they are worn, damaged or swollen.
 If your machine is air-cooled, check for any accumulation of dust and dirt
on the condenser. A dirty condenser reduces the efficiency of the machine.
The condenser must be cleaned monthly with a soft brush. Do not use
screwdrivers or other metal tools to clean the slots between the slats.
 If your machine is water-cooled, check that the water connection lines
are not twisted or leaked. Twisting may occur if the machine is moved for
cleaning or maintenance. In the case of damaged or faulty water connection
lines, an authorized technician must be called.
3 MAINTENANCE
3.1 Original spare parts
For spare parts ordering, always mention the corresponding code number
and the name reported on each table caption.
The manufacturer declines any liability for damages to people and/or things
due to employment of non-original spare parts.
