Place the flour, baking powder, sugar, butter, egg and beetroot if using into a mixing
bowl.

Mix the cocoa powder, food colouring and sufficient water to make a smooth paste
together and add this to the mixing bowl.

Beat the mixture either by hand with a wooden spoon or with a food mixer for one
minute.
5.
Place a cupcake case into each pie well and fill 2/3 way with the mix.
6.
Close the pie maker and cook for 10 minutes until the cakes are risen and just firm to
touch. Repeat with the remaining mixture.
7.
Mix the cream cheese, icing sugar and lemon juice together and use to decorate the
cooled cupcakes. Alternatively decorate with glace icing.
Makes: 2 cases
Ingredients
200g shortcrust pastry, rolled and cut with the large side of the cutter for 2 bases
Method
1.
Preheat the pie maker until the green light comes on.
2.
Press a pastry base into each pie well. Prick the base.
3.
Close the pie maker and cook for 8-10 minutes until the pastry is golden brown and
cooked.
4.
Carefully remove the pastry case, cool slightly and then use as required.
