Vanilla Sugar
INGREDIENTS
- 2 cups granulated sugar
- 1 vanilla bean
PREPARATION
Pour the sugar into an airtight container. Slice vanilla bean
in half lengthwise, open the bean, use a spoon or kitchen
knife to scrape out the seeds. Stir the seeds into the sugar,
then bury the bean pod into the sugar. Cover the container
and let stand for at least one week.
Fine Sugar

PREPARATION
Starting with a little more granulated sugar than the recipe calls for, pour
the sugar into a food processor (fitted with a metal blade) then cover. Turn
the processor to high speed and process the sugar for about 1-2 minutes.
The exact time will depend on quantity of sugar and your processor. After
processing, let the dust settle for 10-20 seconds, then remove the cover.
Store it as you would regular sugar.
Pearl Sugar
Pearl sugar is a type of specialty sugar, primarily used in Scandinavia
and parts of northern Europe. Unlike granulated sugar, this sugar is
larger clumps of compressed granules that do not melt easily, making it
perfect for a little crunch in your baked goods. Pearl sugar can be found
in some grocery and gourmet stores, or you can make it yourself.
INGREDIENTS
¾ cup sugar
1 tbsp. water
PREPARATION
Add water and sugar to a small saucepan. Turn stove on to lowest heat
setting, then stir the mixture with a wooden spoon until small clumps of
sugar form. If sugar does not clump, add 1/2 tsp. water and keep stirring.
Do not add more water.
Let sugar sit on low heat for 20-30 minutes, stirring occasionally. This
process will dry out the sugar clumps.
When clumps are dried, remove from heat and let cool completely. Do not
use them before completely cooled.
