Parisian Thin Waffles
This recipe has been handed down through several generations
of Parisians – it's about the simple pleasures of good food. Thin waffles
are sweet and crunchy - sometimes considered coffee cookies.
GRID
6" x 7 ¼" (M003) YIELD 18-20 sm. waffles RESTING TIME Overnight
INGREDIENTS
- ¾ cup butter
- ¾ cup fine sugar (see helpful hints)
- 1 tsp. vanilla sugar
(see helpful hints)
- 2 eggs, beaten
- 2 cups all-purpose flour
- 1 pinch of salt
PREPARATION
1. In a large sauce pan, melt the butter over low heat. Once melted, turn off the heat
and remove the pan.
2. Add the sugars and the beaten eggs, mix well.
3. Add the flour and salt and stir until incorporated.
4. Cover the batter and let it rest overnight in the refrigerator.
5. Preheat the waffle iron to 7 on the thermostat.
6. Pour 2 tsp. of batter into the centers of the plate sections, close the cover and
turn several times so the batter spreads evenly while cooking.
7. Cook, turning the waffle iron regularly.
8. Cook until brown. Cool completely before eating.
Almond Waffles
Almond flavoring adds a touch of luxury to this recipe – for extra pizazz
add 1 teaspoon of almond extract to pump up this flavor.

INGREDIENTS
- 4 cups self-rising flour
- 1 ¾ cups fine sugar (see helpful hints)
- 1 ¼ cups butter, melted
- 1.8 oz. ground almonds
- 4 eggs, beaten

- 1 pinch of salt
PREPARATION
1. Preheat the waffle iron to 7 on the dial.
2. Pour the flour into a large bowl. Add the salt, sugar and ground almonds and mix.
3. Make a well in the center of the flour mixture and pour in the eggs, folding in the
flour to incorporate.
4. Add the melted butter and the water, stir until completely combined. Add extract
at this step if using.
5. Pour batter into the center of the plate, close the cover and turn several times so
the batter spreads evenly while cooking. Cook until brown.
