Hunting Waffles
The Belgian Ardennes has an abundance of forests. Hunters hide in the
thickets for hours, snacking on these waffles, waiting to catch sight of
their target.

YIELD 8 waffles
INGREDIENTS
- 4 cups flour
- 1 pinch of salt
- 1 cup milk, warmed (100-110°F)
- 2 tbsp. fresh yeast
- 1 egg, slightly beaten
- 1 stick, plus 6 tbsp. butter, softened
- 3 tbsp. vanilla sugar (see helpful hints)
- 2 cups pearl sugar (see helpful hints)
PREPARATION
For best results, use a stand mixer with a dough hook.
1. In the bowl, combine the flour and salt and make a well in the middle.
2. Warm the milk slightly and combine with the yeast.
3. Slowly pour in the yeast/milk mixture and slightly beaten egg into the flour mixture.
4. Mix until incorporated then fold in the butter. The dough should be dry but not
hard. Add more milk if necessary.
5. Cover and let rest for 30 minutes.
6. Add the vanilla sugar and pearl sugar. Mix well to combine.
7. Let rest another 30 minutes.
8. Preheat the waffle iron to 7 on the dial.
9. Divide the dough into about 8 pieces. Place a dough ball into the centers of the
plate sections, close the cover and turn several times so the batter spreads evenly
while cooking.
10. Cook until brown, approximately 5-7 minutes.

Cinnamon Waffles
The flavor of cinnamon is warm and comforting, and gives these waffles
a spicy aroma.

- 1.8 oz. fresh yeast
- 1 cup milk, warmed (100-110°F)
- 1 cup water
- ¼ cups fine sugar (see helpful hints)
- 1 ¼ cups butter, softened
- 2 cups pearl sugar (see helpful hints)
- 4 tsp. cinnamon
- 1 tbsp. honey
PREPARATION
For best results, use a stand mixer with a dough hook.
1. Add flour and salt to the bowl, make a well in the middle and add the yeast and
milk. Turn mixer on low to slowly blend in all the flour. Next add the fine sugar
and water while the dough is forming.
2. Cover and leave to rest for 45 minutes to let the yeast activate.
3. Once the resting is completed, add the softened butter, pearl sugar, cinnamon,
and honey to the dough. Mix well.
4. Turn the dough out of the mixing bowl onto a lightly floured surface and continue
to knead for another 5 minutes. Cover and let rest for 15 minutes.
5. Preheat the waffle iron to 7 on the dial.
