Belgian Waffles
Light and fluffy, sweet waffles with a slightly chewy texture.
GRID
4 ¾" x 7 ¼" (M001) or 6" x 7" (M002) YIELD 8 waffles
INGREDIENTS
- 2 cups self-rising flour
- 3 tbsp. vanilla sugar (see helpful
hints)
- 1 cup milk, room temperature
- 7 tbsp. butter, melted
- 3 eggs, separated and at room
temperature
- 1 pinch of salt
PREPARATION
1. Preheat the waffle iron to 7 on the dial.
2. In a large bowl, mix the flour and sugar.
3. Add ¼ cup milk to the flour mixture and stir until incorporated.
4. Whisk the egg yolks until light yellow and fold into the flour mixture.
5. Add the remaining milk to the bowl and mix until smooth.
6. Add the melted butter and stir until combined. Set aside.
7. Beat the room temperature egg whites and the salt in a separate bowl until stiff
peaks form. Fold the egg whites carefully into the batter.
8. Pour batter into the center of the plate, close the cover and turn several times
so the batter spreads evenly while cooking. Cook until brown; approximately 5
minutes for lightly crisp waffles.
9. Serve hot, dusted with powdered sugar!

Chantilly Waffles
Perfect for dessert – airy and sweet! Top with whipped cream and
strawberries, or drizzle with chocolate, for an after dinner treat.

INGREDIENTS
- 1/2 cup flour
- 1 tsp. baking powder
- 1 pinch of salt
- 1/2 cup milk
- 6 eggs, separated *save 4 yolks,
reserve all whites
- 1/2 cup (1 stick) melted butter
- 2 tbsp. vanilla sugar (see helpful hints)
PREPARATION
1. Preheat the waffle iron to 7 on the dial.
2. Mix the flour, baking powder, and salt together. Set aside.
3. Beat 6 egg whites until still peaks form. Set aside.
4. Whisk the egg yolks and milk together in a large bowl until completely combined.
5. Fold the flour mixture into the egg and milk mixture.
6. Add the melted butter and vanilla sugar.
7. Finally, fold in the beaten egg whites until combined, being careful not to over stir.
8. Pour batter into the center of the plate, close the cover and turn several times
so the batter spreads evenly while cooking. Cook until brown, approximately 3-5
minutes.
