fruit is ready for draining. After draining off the juice from the collection bowl, tilt the bowl to get the last of
the juice out. Pour the remaining pulp out of the colander into a sieve and refill the colander with fresh and
coarsely cut fruit. Check the water level in the water pan and repeat the whole process.
If there is not enough juice left for the last bottle, you can simply drain this into a smaller bottle or let it cool
and drink it immediately. However, the juice tastes best after it has been bottled for a few weeks and the
sweetness has stabilised.
Wipe the outer surfaces clean using a damp cloth to remove any residue before storing the bottles or jars.
This will prevent any mould forming. Affix labels to the bottles showing their contents and the date they
were produced. Before storing, check that the cap or sealing system is secure: screw tops and rubber caps
should be slightly concave.
Cleaning
Important: The colander must be cleaned immediately, as soon as you have finished juicing. To ensure the
healthy and hygienic processing of food, you should always keep the equipment and surroundings spotless.
Use hot water and vinegar or a suitable cleaning agent. Never use chemical cleaning agents which are not
suitable for foodstuffs.
Useful information
All kinds of juicy fruits can be processed. Immature fruits give a more sour taste, mature fruits produce
sweet juice. The average time for juicing varies between 90 and 180 minutes, depending on the type of fruit.
When large quantities of juice are no longer flowing from the tap, the juicing process has finished.
Items required
Collect undamaged glass bottles; these could be all types of jars or glass bottles such as those used for
wine, beer, cider, champagne, juices, milk bottles or flip-top bottles. Pay particular attention for any dam-
age around the neck of the bottle or the rim of the jar. Always rinse out bottles as soon as they are empty; it
saves work later on and is hygienic. Store them upside down with their opening facing downwards to keep
them dry and clean.
Pay attention to the closure system. The original closure of a beer bottle or wine bottle (crown cap or cork)
are intended for one-off use. Ensure you have a replacement closure system available, such as weck tops,
screw caps or new crown caps. Juice bottles often have screw tops that can sometimes be re-used after
being carefully checked. The sealing ring in the top must not feel hard to the touch, must not have any
breaks, must not be discoloured and must be scrupulously clean. Make sure you have enough new tops
and that these have been sterilised before use to avoid disappointing results. Pay close attention to the
size when buying tops and take along the bottle if in any doubt. Prior to using the bottles or jars for making
juice, you must ensure the containers and tops have been sterilised by immersing them in very hot water for
an extended period of time or heating them in an oven. Immediately after filling the bottles, attach a label
showing the contents and date they were produced.
