Juicing recipes
Redcurrant jam
Bring a litre of redcurrant juice to the boil, remove from the heat and stir in a kilogram of sugar. Continue to
stir for a quarter of an hour and pour the jam into jars.
Strawberries
The best way to juice strawberries is to insert a muslin cloth into the juicer's fruit bowl to retain the hairs
and seeds. Carefully wash the strawberries; you do not need to remove the stems. Strawberries release
their juice quickly. However, the pulp sometimes become glutinous, so stir them occasionally. Allow them to
steam well for about forty-five minutes. The clear juice has a lovely red colour and is ideally suited for using
in cocktails. Strawberry juice blends well with other juices.
Strawberry yoghurt drink
Stir three soup spoons of strawberry juice into a quarter of a litre of yoghurt and add a little honey or sugar
to taste. Serve in an attractive glass and decorate with a fresh strawberry. Allow a young lemon leaf to float
in your drink, giving it a subtle aroma.
Strawberry syrup
Mix half a litre of sweet white wine with half a litre of strawberry juice and add one kilogram of sugar. Heat
the mixture until the sugar dissolves without it boiling and then bottle the syrup immediately. The fruit syrup
can be used with a variety of desserts and drinks.
Pears
Use juicy, ripe pears. Wash the pears and cut them up into large pieces and fill the fruit colander to the brim.
If you are going to use the pulp later to make fruit paste, remove the cores and stems. Juice at a high heat
for an hour to an hour and a half. You can also add a few citrus fruits to the steam juicer, without their peel if
they are not organic lemons.
Pear syrup
If you let the pear juice cook and thicken whilst stirring, you will get an excellent syrup that will not need any
extra sugar. This process does, however, require some patience. If you add apple juice to the pear juice, you
will then get a fresher tasting syrup.
