USING THE FRYER
REMINDERS FOR USE
The appliance is intended for frying food in oil/liquid grease.
Heating system
Do not turn the heating on when there is no oil or fat in the tank,
or when the oil or fat level is below the minimum level mark at
the back of the tank. When the fryer is on, the oil level must
always be at or above the minimum level mark indicated at the
back of the tank.
Safety devices
The appliance is equipped with a manual reset safety thermo-
stat that turns the heating off when the operating temperature
exceeds the maximum permitted value. The display will show
"SAFETY THERMOSTAT TRIPPING".
Gas heated appliances have a manual reset safety device that
turns the heating off in case of burner ignition issues. The di-
splay will show "BURNERS DISABLED".
Filling and using the baskets
Do not fry with the baskets overloaded. Productivity will be re-
duced and the food will cook unevenly and absorb more oil.
Do not exceed the level (weight) indicated below:
• Frozen chips: 1/3 of the height (1.5 kg x ½ basket).
• Fresh chips: 1/2 of the height (1.5 kg x ½ basket).
• Other food.... : 1/2 the height.
Insert the basket in the tank very slowly. Stop if the foam that
forms overflows from the tank.
Do not place food portions that are too big or not dry inside the
tank, as they could cause hot oil sprays or oil overflowing from
the tank. WARNING: danger of burns.
Automatic basket lifting
The lifting devices move up every time that the appliance is
connected to the power supply. WARNING: avoid placing
objects near the lifting devices as they could fall.
Do not insert or remove the basket supports when the lifting
devices are moving.
Basket supports cannot be removed from the lifting devices
when these are in the raised position.
Attach the basket to its support before starting the timer (tou-
ching the "PLAY / PAUSE" button).
When the timer is activated, the basket is lowered in the tank,
and lifted back up again when the set cooking time has expired.
Cooking temperature
Frying at high temperature will cause much quicker deteriora-
tion of the oil.
Adjust the cooking temperature as indicated below:
• Flower coated food: max 170 °C
• Breaded food: max 175 °C

• Other food: max 180 °C
Caring for the oil
In order to extend the life of the oil and avoid unpleasant taste
and smell comply with the following rules:
• Adjust the cooking temperature as indicated in the "Cooking
temperatures" section.
• Remove any food residues from the oil surface.
• Regularly filter the oil.
• Do not season the food while in the frying tank.
• Before placing the food in the frying tank remove any excess
crumbs or water.
• Regularly clean the frying tank.
• Regularly clean the filtration tank (7) and the 2 filters (8 and
9).
Replace the oil when smoke is produced during cooking. Old
oil has a lower ignition temperature and tends to boil suddenly.
WARNING: danger of fire or burns.
Using solidified oil (or grease)
If using solidified oil (or grease), this should be melted separa-
tely before being placed in the tank.
Otherwise, strictly follow the instructions in the "Filling the tank
with solidified grease" section.
FILLING AND EMPTYING THE WELL
In our opinion solidified oil (or grease) should not be used.
Otherwise, strictly follow the instructions in the "Filling the tank
with solidified grease" section. WARNING: danger of fire.
Do not leave oil in the tank during the night at ambient tempe-
ratures below 10 °C. WARNING: the oil (or grease) could so-
lidify, therefore preventing full use of the fryer and causing
damage to the filtration pump (if installed).
Filling the tank with oil (fig. A)
Check that the tank is clean and dry.
Do not fill the tank above the maximum level. This is indicated
by the top mark at the back of the tank. If the tank is filled above
the maximum level, remove the excess oil. If this is not done,
the oil may spill out from the tank (and the filtration tank if pre-
sent) and on the floor. WARNING: risk of slipping and falling
with possible serious or lethal injuries.
• Open the door.
• Close the drain valve by pushing its handle to the end (1).
• Fill with oil to the minimum level, indicated by the mark at the
back of the tank. The oil level will increase when hot.
Using the pump and the hose (fig. A, C)
• Disconnect the tray suction pipe (2) from its fitting (A).
• Connect the hose (3) to the same fitting (A).
• Connect the pipe with handle (5) to the hose.
• Insert the pipe with handle in the new oil container.
• Switch on the control panel (instructions in "SWITCHING ON
THE CONTROL PANEL").
• Touch "FILTRATION / TANK FILLING / EMPTYING" and then
"TANK FILLING... and follow the instructions on the display.
Touch "START" to switch the pump on".
