When flavoring recipes with chunks of fruit, candy or alcohol, add through the
cover opening, while the freezer bowl is turning, during the last few minutes of
the freezing process unless instructed to do otherwise in the recipe. If the alco
hol is added to the mixture before this stage, it may slow down the freezing
process.
When using recipes for sorbets that contain fruit, the ripeness and sweetness of
the fruit or juice will affect the flavor of your frozen dessert. Add or omit sugar
from the mixture depending on the sweetness of the fruit being used. Remember,
the sweetness of the frozen dessert will be less than the original mixture.
If using fresh fruit, soak the fruit 1 hour with part of the sugar from the recipe. This
will keep the fruit softer once the freezing process begins.
A small rubber spatula may be used to assist in stirring should the ice cream mix
ture accumulate around the paddle before the freezing process is complete.
Carefully stick the spatula straight down through the cover opening in the top of
the cover to break the frozen chunks apart.
A mixer or blender may be used to mix the ingredients together and dissolve the
sugar. The only time a blender or food processor is necessary is to puree fruit.
The amount of frozen dessert will usually equal the amount of ingredients put into
the ice cream maker. It may increase in volume for some recipes but not usually.
When cooking ingredients, cook on low heat stirring constantly unless the recipe
instructs otherwise.
Egg Beaters®and egg substitutes are pasteurized for safety, therefore cooking is
not necessary.
Yogurts with different fat content may be substituted in equal amounts (i.e.
yogurt, low fat yogurt, and no fat yogurt.)
Prepackaged ice cream and frozen yogurt mixes may be used. Do not exceed a
total of 4 cups of the mixture. Remember, pour mixture into the rotating freezer
bowl.
ICE CREAM ADDITIONS
Try adding 3/4 cup of any of the following to your ice cream for a flavor variation.
Add the ingredients to your ice cream while the freezer bowl is turning, just before
the end of the freezing process. Allow enough time for the ingredients to be mixed
thoroughly before turning it off.
