SPECIAL MAINTENANCE

5.1
PRELIMINARY SAFETY OPERATIONS
WARNING! Before performing any maintenance operation stop
the appliance and cut the power supply by turning the switch
(fig. 2 item 2) to "0", then disconnect the power supply by
disconnecting the power cable from the power socket.
The operations must only be carried out after the oven has
cooled down.
The working area must be properly illuminated during
maintenance and if used during the night or if visibility is poor.
All maintenance operations and repairs must be carried out
using suitable accident prevention equipment, by specialised and
properly licensed technicians, approved by the manufacturer.
All precautions are to keep the appliance in a proper state, and
failure to observe them might result in severe damage that will
not be covered by the guarantee, and in unnecessary risks.
WARNING! Periodically (at least once a year), and every time a
malfunction occurs, have a specialist technician check the
appliance over to ensure it is working properly.
WARNING! Some operations, listed here below, need to be
carried out by at least two people.
5.2
GENERAL CLEANING
After carrying out the operations described in point 5.1 above, clean
the appliance as follows:
Every day at the end of operations, after leaving the appliance to cool
down, carefully remove from all parts of the oven any waste that may
have collected during cooking, using a damp sponge or cloth and a
little soapy water if necessary, then rinse and dry.
Carefully clean all accessible parts.
WARNING! Every day, carefully clean off any fat or grease that
may have dripped during cooking as this is a potential fire
hazard.
WARNING! Never clean the oven with direct jets of water or
with jets of water under pressure. Always take care to ensure
that the water or other products use does not come into contact
with electrical parts.
The use of toxic or harmful detergents is strictly prohibited.
NOTE! Do not clean the tempered glass on the doors when it is
still hot.
Do not use solvents, detergents containing aggressive substances
(chlorides, acids, corrosives, abrasives, etc. ...) or equipment that
could damage surfaces. Before starting up the appliance again,
make sure that none of the cleaning equipment has been left
inside.
5.3
REPLACING
ELECTRICAL
FUSES
After carrying out the operations described in point 5.1 above,
proceed as follows:
- Remove the top rear panel.
- Disconnect the electrical connections to the component and replace
it.
- Perform the above operations in reverse order to reassemble, taking
care that you connect the component up correctly.
- Replace the top rear panel.
NOTE! If the electronic card has to be replaced, perform a
general Reset of the appliance as described in point 5.15.
The fuses for the appliance are located on the rear electric panel (fig.
24 item Y), to replace them proceed as above.

5.4
CHANGING THE LIGHT BULB
After carrying out the operations described in point 5.1 above,
proceed as follows:
- On the outside of the door, remove the protective light casing by
unfastening the top and bottom screws;
- Replace the bulb (Plate A Item 32) with another of the same type
and power;
- Perform the above operations in reverse order to reassemble.
5.5
CHANGING THE WATER SOLENOID
After carrying out the operations described in point 5.1 above,
proceed as follows:
- Unfasten the screws and remove the upper right hand rear panel.
- Unfasten the nut fixing the copper pipe;
- Remove the two screws fastening the valve;
- Unscrew the valve from the reduction manifold;
- Replace the valve (Plate A Item 29);
- Perform the above operations in reverse order to reassemble.
5.6
REPLACING THE MOTORS/FANS
After carrying out the operations described in point 5.1 above,
proceed as follows:
- Open the door, extract the carriage and remove the air conveyor
located in front of the fans.
- Remove the fan (Plate A item 11) by unfastening the fixing screws
and replace if necessary.
- Remove the two top rear panels and unfasten the nuts fixing the
motor.
- Remove the motor (Plate A Item 21) and replace it.
- Perform the above operations in reverse order to reassemble.
5.7
CHANGING THE HEATING ELEMENTS
After carrying out the operations described in point 5.1 above,
proceed as follows:
- Remove the two rear panels by unfastening the fixing screws.
- Disconnect the heating element eyelet terminals.
- Open the door, extract the carriage and remove the air conveyor
located in front of the fans.
- Unfasten the fixing screws, remove the heating element and replace
it (Plate A item 31).
- Perform the above operations in reverse order to reassemble.
5.8
CHANGING THE TEMPERATURE PROBES
After carrying out the operations described in point 5.1 above,
proceed as follows:
- Remove the two top rear panels.
- Unfasten the nut fixing the thermocouple.
- Disconnect the two wires feeding the thermocouple.
- Replace the thermocouple (Plate A Item 2).
- Perform the above operations in reverse order to reassemble,
making sure that the connectors are in the right positions.
5.9
CHANGING THE TEMPERED GLASS
After carrying out the operations described in point 5.1 above,
proceed as follows:
- Open the door;
- Remove the screws from the aesthetic frame inside the door;
- Unfasten the screws from the frame fixing the glass;
- Remove the seal elements;
- Replace the glass (Plate A Item 15);
- Perform the above operations in reverse order to reassemble.
WARNING! Under no circumstances must the glass rest on,
or come into contact with metal parts, so that it is essential to
insert a fibreglass braid, of the same type fitted by the
manufacturer, at the front, where it rests against the frame.
