TECHNICAL SPECIFICATIONS

1.1
DESCRIPTION OF THE APPLIANCE
The appliance is comprised of several modules, placed on top of one
another:
- "Hood".
- Baking chamber
- Support or leavening compartment
Each baking chamber compartment is independent with electronic
temperature regulator; it has a safety thermostat safety thermostat and
a flap door, which is hinged at the bottom.
NOTE: The electrical connection of each module (hood, chamber,
compartment) is independent (see point 2.5.2); nonetheless, there
are electrical connectors on the backs of the various modules
(between
hood/chamber,
/compartment), as illustrated in figure 6.
Inside, the baking chamber is made in steel and according to the model,
the cooking surface can be in refractory brick or embossed plates.
The support is comprised of a steel structure and can be equipped with
tray holder guides.
The leavening compartment is comprised of a steel structure; it has tray
holder guides and an electronic temperature regulator.

APPLIED DIRECTIVES
This appliance complies with the following directives:
Low Voltage Directive 2006/95/EC and subsequent amendments
Electromagnetic Compatibility Directive 2004/108/EC and subsequent
amendments

WORKPLACES
The appliances are programmed by the operator using the control panel
on the front and they must be supervised while in operation.
Access doors to the equipment are positioned on the front of the
appliance.

IDENTIFICATION
For any communication with the manufacturer or assistance centres,
always quote the equipment SERIAL NUMBER, which can be found
on the rating plate fixed in the position shown in fig.1.

LABELS
The equipment is provided with safety warning labels, fixed in the
points illustrated in fig.2.
WARNING! On the equipment surface there is a burn risk due to high
temperature elements. For any intervention or action wait for the
appliance to cool to room temperature and always use suitable
protective equipment (gloves, glasses...).
WARNING! Presence of dangerous tension. Before performing any
maintenance operation, disconnect the power supply by turning off the
switches fitted on the outside of the oven and/or the leavening
compartment and wait for the appliance to cool to room temperature.

WARNING! To avoid scalding, do not use loaded containers with liquids
or cooking goods which becomes fluid by heating in higher levels than
those which can be easily observed.

SUPPORT
COMPARTMENT
The cooking surface can be supplied with the rear part raised by 50mm
to make it easier to put things in and take them out.
NOTE: It is only possible to fit the steamer if the oven does not
have a raised rear cooking shelf.
1.10 NOISE
This appliance is a technical instrument of work and normally, the
noise level threshold at the operator station does not exceed 70 dB (A)
(single baking chamber configuration).

INSTALLATION
NOTE: the manufacturer declines all responsibility in the event of
failure to comply with safety regulations.
2.1
TRANSPORT
The equipment is normally shipped over land, assembled on wooden
pallets (fig.3).
Individual pieces are protected by plastic film or cardboard boxes.
2.2
UNLOADING
NOTE: On receiving the equipment it is advisable to check its
conditions and quality.
Raise the equipment using only and exclusively the points indicated at
the pict. 4a.
WARNING! Lifting the equipment using points other than those
illustrated in fig 4a. can cause considerable damage to its integrity.
WARNING! Before lifting the different modules, make sure that
the mechanical lifting means has a capacity greater than the weight
of the module (see the Working Dimensions and Weights table).
WARNING! Before lifting the different modules, make sure that
you have disconnected the wiring between them (fig. 6).
In case of manual movement or vertical translation for the purposes of
passing through doors and/or small areas, please use the relevant
movement kit (fig.4b) and abide by the instructions provided.
Manual movement or vertical translation must only be used in cases of
extreme necessity and then only for extremely short distances.
The equipment can only be positioned vertically on the left side of the
oven and even then, only for very short periods, otherwise it could
malfunction.
Once the equipment is in position, remove all parts of the movement
kit.
WARNING! In case of manual movement, always remove the
refractory or the embossed plate shelves inside the baking
chamber.
WARNING! Manual movement or vertical translation must always
be carried out with the aid of a mechanical means.
WARNING! For safety reasons, manual movement or vertical
translation must only be carried out by qualified personnel.
Position the appliance in a suitably hygienic, clean, dry and dust-free
area, making sure that it is stable.
Packaging materials must be disposed of in compliance with current
regulations; always make sure that plastic materials are sent to safe
places, to avoid any dangers, particularly for children. At the end of the
appliance's working life it must be disposed of at legally authorised
recycling plants.
