ENVIRONMENTAL SPECIFICATIONS

To ensure that the equipment operates properly, it is advisable to
comply with the following limits:
Working temperature: +5° ÷ +40°C
Relative humidity: 15% ÷ 95%

POSITIONING, ASSEMBLING INSTALLATION AND
MAINTENANCE AREAS
WARNING! During positioning, assembling and installation, it is
necessary to abide by the following:
- Current laws and standards concerning electrical equipment.
Directives and indications issued by the electricity supply network
Local building and fire-prevention laws
Accident prevention regulations
Regulations in force of electrical standards
- Remove the protective film from all the outer panels of the oven,
pulling it gently to remove all the adhesive.
Should any adhesive remain on the oven, remove using kerosene or
benzene.
The individual modules chosen to create the oven must be placed on
top of one another as shown in fig. 5, slotting the relevant feet of each
module into the openings of the module below (part.A - fig.5).
The oven also needs to be placed in a well ventilated area at a
minimum distance of 50 cm from the left and right side walls (fig.7).
These minimum distances are indispensable to guarantee the correct
operation of the equipment. Some cleaning and maintenance operations
(heating element replacement, etc.) require greater distances than the
ones stated and therefore, it is necessary to consider the possibility of
moving the oven to perform said operations.
2.5
CONNECTIONS
2.5.1
STEAM EXTRACTION CONNECTION
WARNING! The steam extraction connection must only be made
by qualified personnel.
The steam exhaust pipe is located on the back of the oven (item C -
fig.8).
NOTE: Connect the steam exhaust to a flu or to the outside using a
pipe with a minimum diameter of 150 mm.
This pipe needs to be inserted (item A - fig.8) into the oven exhaust
pipe. Any extensions need to be connected so that the upper pipes fit
into the lower ones, as seen on the previous connection.
Fit a small plastic tube at the base of the steam exhaust pipe to drain off
any condensation (item B - fig.8). This last operation must be carried
out before fitting the pipe to the outlet.
2.5.2

ELECTRICAL CONNECTION

WARNING! Electrical connections must only be carried out by
qualified personnel, in compliance with current electrical
regulations.
Before starting the connection procedure, check that the earthing
system complies with EN regulations.
Before starting the connection procedure, check that the main
power switch for the supply to which the oven is to be connected
has been turned to the "off" position.
The rating plate contains all the information necessary for proper
connection.
NOTE: The electrical connection of each module (hood, chamber,
compartment) is independent; however, there are electrical
connections at the back to be made between the different modules
(between
hood/chamber,
chamber/compartment), as illustrated in fig.14.
WARNING! The flexible cable to connect to the power supply
must have characteristics at least equal to the model with rubber
insulation H07RN-F and must have a rated section suited to the
maximum absorption (see technical data). The connection cable
must be supplied by the fitter.
When connecting to the power mains, it is necessary to fit a plug
that complies with the standards and regulations in force.
WARNING! It is essential for the equipment to be correctly
earthed.
A special earth terminal (Fig,10-11-13) has been placed on the
connection terminal board. It is marked with the earth symbol and
the earth wire must be connected to it.
These appliances must also be included in the unipotential system. The
terminal to be used for this purpose is located at the back of the
appliance and is marked with the symbol TERMINAL FOR THE
UNIPOTENTIAL SYSTEM.
2.5.2.1 ELECTRICAL
WARNING! For each single baking chamber it is necessary to fit a
main four-pole switch with fuse or an automatic switch suitable for
the values shown on the rating plate, to connect the single devices
to the power supply.
NOTE: The device selected should be in the immediate vicinity of
the chamber and easily accessible.
WARNING! Make sure that the wires connected to the power plug
do not touch each other at any point.
The baking chamber is provided with the required voltage marked on
the rating plate (fig.1).
To make the electrical connection, remove the protective cover on the
back of the baking chamber (fig.9). The connection cable must be
supplied by the fitter.
Insert a cable with a suitable cross-section (see technical data) into the
relevant cable raceway (Item B-fig.9) and connect it to the terminal
board, as illustrated in figures 10 and 11.
These appliances must also be included in the unipotential system. The
terminal to be used for this purpose (Item A-fig.9) is located at the back
of the appliance and is marked with the symbol TERMINAL FOR THE
UNIPOTENTIAL SYSTEM.
When connection has been completed, check that the supply voltage,
with the appliance running, does not differ from the rated value by
more than ± 10%.
WARNING! When disconnecting from the power mains, after
switching off the appliance, wait at least 15 MINUTES before
unplugging it in order to allow the electronic circuits inlet
condensers to discharge. Never touch the plug contacts under any
circumstances.
2.5.2.2 ELECTRICAL CONNECTION OF THE LEAVENING
WARNING! The compartment must be fitted with a two-pole main
switch with fuses or an automatic switch suitable for the values on
the rating plate.
NOTE: The device selected should be in the immediate vicinity of
the compartment and within easy access.
WARNING! Make sure that the wires connected to the power plug
do not touch each other at any point.
The leavening compartment is delivered with a voltage of V230 1N
50/60 Hz, as stated on the rating plate on the side (fig.1).
To make the electric connection, remove the protective cover on the
back of the compartment (fig.12).
The connection cable must be supplied by the fitter. Insert a cable with
a suitable cross-section (see technical data) into the relevant cable
raceway (Item B-fig.12) and connect it to the terminal board, as
chamber/chamber,
illustrated in figure 13.
These appliances must also be included in the unipotential system. The
terminal to be used for this purpose (Item a-fig.12) is located at the
back of the appliance and is marked with the symbol TERMINAL FOR
THE UNIPOTENTIAL SYSTEM.
When connection has been completed, check that the supply voltage,
with the appliance running, does not differ from the rated value by
more than ± 10%.
2.5.2.3 ELECTRICAL CONNECTION OF THE EXTRACTION
WARNING! The extraction hood needs to be fitted with a two-pole
main switch with fuses or an automatic switch suitable for the
values on the rating plate.
