memory to which to save the new program, using the "+" and "–"
buttons: this will overwrite the previous program in that position.

EDITING A PROGRAM

To edit a program that has already been saved, carry out the same
operations indicated in paragraph 3.2.2 – SAVING A PROGRAM.
3.3
ADDITIONAL BAKING CHAMBER SETTINGS
The equipment has further settings.
3.3.1
HOTKEY FUNCTION
The "Hotkey" function ( "star" button) is a button that can be
customised for direct access to a specific function, as chosen by the
user.
Using the "CURSOR", scroll through the display until the word
"EXTRAMENU" is highlighted to assign a function to the "Hotkey"
button. Press "OK" to confirm.
In the screen that appears on the display, use the "+" and "-" buttons to
select this item in the menu: "Hotkey". To confirm this choice, press
"OK".
In the screen shown on the display, use the "+" and "-" buttons to select
the item that corresponds to the function you wish to assign to the
"Hotkey" button. To confirm this choice, press "OK".
To confirm, press "RETURN" until you return to the main screen. The
new setting will be displayed in the text message (fig.39). To enable
the new function, simply press the "HOTKEY" button.
3.3.2
CLEAN OVEN FUNCTION
The "Clean Oven" function can be used to eliminate cooking residue
on the internal walls of the oven by means of carbonisation. When this
function is selected, a program pre-set to very high temperatures is
activated for a factory-set period of time. When this program has
completed and the oven is again at room temperature, it is sufficient to
remove the charred residues with a brush. Using the "CURSOR", scroll
through the display until the word "EXTRAMENU" is highlighted to
enable the "Clean Oven" program. Press "OK" to confirm.
In the screen that appears on the display, use the "+" and "-" buttons to
select this item in the menu: "Clean oven". To confirm this choice,
press "OK".
In the "Clean oven" screen that follows, it is possible to use the "+" and
"-" buttons to select the level of cleaning: light, normal or intensive. To
confirm this choice and activate the function, press "OK".
The display will read "Clean Oven Program started – Please wait".
At the end of the program, the oven will switch off, cutting off
electrical power to the heating elements.
NOTE: To stop the Oven Cleaning Program in advance, press
"RETURN".
NOTE: We recommend using the light "Clean Oven" program
frequently to preserve the life of the equipment. Do not make
frequent use of the intensive "Clean Oven" setting.
NOTE: During cleaning, the hood automatically switches on for
the whole duration of the cleaning program.
NOTE: The steam dump valve closes automatically during a
cleaning programme and opens again totally at the end of the cycle.
Return the valve to the required position for the next manual
cooking cycle (see 3.2.1).
3.3.3
DAILY TIMER FUNCTION
This function can be used to order timed start-up of the oven, setting up
to two different start-up and shut-down times for every day of the
week.
To adjust the "Daily Timer", proceed as follows: using the
"CURSOR",
scroll
through
"EXTRAMENU" is highlighted. Press "OK" to confirm.
In the screen that appears on the display, use the "+" and "-" buttons to
select this item in the menu: "Daily Timer". To confirm this choice,
press "OK".
In the "Daily Timer" screen that appears (fig.40), use the "CURSOR"
button to scroll through the parameters to be set/modified: then use the
"+" and "-" buttons to enter the time required. To activate the time
selected, move the "CURSOR" until it is positioned beneath each time
(marked graphically with "- -") and select "On" or "Off" to activate
start-up or shut-down, respectively.
It is sufficient for there to be a single "On" in the table on the display
for the function to be active: the oven will start up at the first "on"
encountered in chronological order from the time of activation.
NOTE: Setting an "On" without setting a subsequent "Off" will
still be considered an active setting: the oven will turn on
automatically at the time set, and will have to be turned off
manually. In the same way, setting an "Off" without setting a
previous "On" will still be considered an active setting: the oven

will switch off automatically at the time set, if it has been switched
on manually prior to that time.
On reaching the start-up (or shut-down) time, an intermittent buzzer
warns that the oven is about to turn on (or off), while the message
"Start-up in progress" is displayed in the text message (or "Shut-down
in progress").
WARNING! The sound alarm serves to signal that the equipment
is about to start up and therefore, anyone within its radius of
activity for any reason must move to a safe distance or disconnect
the equipment from the power supply; the above function and
relevant risk must be made known to all those who might be in the
vicinity of the equipment for the purpose of safeguarding them
against accidents or injury.
Thus, unless it is changed, the oven will start up (or shut down) again
at the same time; the "Timer" function will remain operational.
Therefore, if no changes are made, one week later at the same time, the
oven will start up (or shut down) again.
NOTE: If the operator forces an oven start-up when the timer is
switched on, before the set time, then the oven will start up
normally and at the start-up time set for the timer, everything will
proceed as usual (the oven is already on and therefore no buzzer
will sound). The same thing happens if the oven is already off at
the time set for shut down.
NOTE: If there is a power outage while the timer is being used
(Black-out) no parameters will be changed; the important thing is
for the power to return before the start up time.
NOTE: If the door is open when the time programmed for
switching on is reached, the oven does not switch on.
3.3.4
SETTING THE DATE AND TIME
Using the "CURSOR", scroll through the display until the word
"EXTRAMENU" is highlighted. Press "OK" to confirm.
In the screen that appears on the display, use the "+" and "-" buttons to
select this item in the menu: "Set clock". To confirm this choice, press
"OK".
In the "Set clock" screen that appears, use the "CURSOR" button to
scroll through the parameters to be set/modified: then use the "+" and
"-" buttons to enter the date and time required. Press "OK" to confirm.
3.3.5
SETTING THE LANGUAGE:
Using the "CURSOR", scroll through the display until the word
"EXTRAMENU" is highlighted. Press "OK" to confirm.
In the screen that appears on the display, use the "+" and "-" buttons to
select this item in the menu: "Language". To confirm this choice, press
"OK".
In the "Language" screen that appears, use the "+" and "-" buttons to
select the language required. Press "OK" to confirm.
3.4

ALARMS DISPLAY

If a problem is detected, two different types of alarm can be displayed.
1)
Maximum Temperature Alarm
2)
Thermocouple Failure Alarm (this alarm also indicates
which of the thermocouples has failed) see fig.41
3)
Steam Exhaust Valve Failure Alarm.
When one of the above alarms occurs the control unit indicates on
screen which alarm has been triggered, and turns the oven off for
alarms 1 and 2.
Both the buzzer and the visual alarms continue until the "OK" button is
pressed.
The alarm signal remains even after the actual state of alarm no longer
exists, so for example, if the temperature exceeds the max. threshold
foreseen for a moment and then returns to normal values, the alarm
ceases but it is still displayed on the control unit screen, and the
equipment will remain off until it is turned on again. This is to allow
the operator to see that a problem has occurred, even if nobody realised
when it actually happened.
When an alarm is triggered, the equipment will switch off and the
relevant alarm message will continue to be displayed. If you press the
"OK" button, the main menu screen will be displayed and the alarm
message will no longer be shown, but this does not necessarily mean
the problem has been solved. In effect, if the problem still exists the
message will be displayed again and the equipment will once more be
turned off.
WARNING! In case of malfunction or failures in equipment, press
the "OK" button and disconnect the power by pressing the switch
0/1 (fig.26).
Leave the equipment to cool down and send for technical assistance
to remedy the cause of the failure and to make sure that no part of
the equipment is damaged.
