8.2 PREPARATION: USINg vACUUM PACKINg CONTAINERS
The following can be used:
• Vacuum plastic containers (polycarbonate, SAN, etc.) equipped with a valve on the lid. Make sure they can withstand
the vacuum that is to be created.
• Stainless steel vacuum containers, equipped with a valve on the lid (e.g. Green-Vac).
• Glass jars with lids and gasket (e.g. Bormioli)
• Pots and pans together with special vacuum packing lids.
In all cases, liquid products must only fill the containers up to 3/5 of their useful volume.
The lid valves (regardless of the type) or the jar lids (Bormioli type) must be set in a way to allow the air to be drawn from
inside the container.
In the case of "Bormioli" jars, the lid must be loose enough to allow the air to be drawn from inside.
• Prepare a container or a vacuum pack lid
container.
• Fill the container up to a maximum of 3/5 of its volume, if filled with liquid products.
• Position the container directly inside the vacuum chamber, or proceed with the suction using the relative device.
