Storing Jerky
Wrap dried meat in aluminium foil and store in a thick plastic bag or in a glass with
a solid lid. Avoid storing in plastic containers or bags without wrapping them in
aluminium foil or waxed paper. Dried meat should be stored in a dark, dry place
at a temperature between 10-16°C. You can store dried meat at room temperature
for 1 to 2 months. To extend the shelf life up to 6 months, store dried meat in the
freezer. Be sure to mark and date all packages.
RECIPES AND DRYING METHODS
Hawaiian Jerky Marinade
1 tsp salt
1 tsp brown sugar
1 rushed garlic clove
1 lb. (0.5 kg) lean Meat, sliced into ¹/ to ¼ inch (0.3-0.6 cm) thin strips.
Cajun Jerky Marinade
1 cup tomato juice
1-½ tsp dried thyme
1 tsp white pepper
1 lb. (0.5 kg) lean Meat, sliced into ¹/ to ¼ inch (0.3-0.6 cm) thin strips.
1 tsp ginger
¼ tsp pepper
¼ cup soy sauce
½ tsp garlic powder
1-½ tsp dried basil
2 cayenne pepper
¼ cut pineapple
¹/ tsp cayenne pepper
½ tsp ground black
pepper
1-½ tsp onion pepper
