Mussels in white wine
(Benelux)
Ingredients (for 4 persons)
2 – 3 kg mussels
2 onions
2 carrots
1 stick of leek
1/4 root of celery
1 bunch chopped parsley
1 clove of garlic
1 bay leaf
100 g butter
Black peppercorns
3/4 l dry white wine
Plug in the roaster's heating element. Insert the
roaster in the first level from below. Set the oven to
the "Roaster" function and preheat to 175 °C.
Preparation
Clean the mussels under running water and remove
the whiskers. Throw away the opened mussels.
Peel the onions, clean the carrots, the leek and the
celery and cut all the vegetables into small pieces.
Mix the vegetables with crushed garlic, bay leaf and
peppercorns.
Melt the butter in the preheated roaster and steam
the vegetables. Pour in the white wine and place
the mussels in the stock. Place the lid on the
roaster and cook for 15 – 20 minutes.

Whole roasted pike-perch
(Hungary)
Ingredients (for 4 to 6 persons)
1 pike-perch (1 – 1,5 kg)
150 g slices of fatty bacon
100 g butter
2 large potatoes (to place the fish upright in the
roaster)
Plug in the roaster's heating element. Insert the
roaster in the first level from below. Set the oven to
the "Roaster" function and preheat to 175 °C.
Preparation
Get your fishmonger to descale and gut the pike-
perch. Wash the fish, cut into both sides several
times and grease it with fatty bacon.
Place the butter in the preheated roaster. Using the
potatoes, place the fish upright in the roaster and
close the lid. Remove the lid 5 minutes before the
end of the cooking time.
Serve it with an onion cream sauce.
